Breakfast Cookies!!!

Ok my kids are picky, yup I said it. PICKY. Im not sure if its my fault or not but I am trying hard to replace the things they do love to eat that might not be so great for them with healthier versions. One of these things is what we call breakfast cookies, you can find them in the cracker/cookie aisle and while they do contain fiber, whole grains and a good source of B-vitamin I knew I could do better. Plus my wallet will thank me. ;)

Breakfast Cookies

1 mashed banana
1/2 cup honey
1/2 cup natural PB
1 cup oats
2 tsp vanilla
1/2 cup rye/wheat flour
1 tsp chia seeds
1/4 cup vanilla protein powder (I used Herbalife Vanilla PDM)
2 tsp cinnamon
1/2 tsp baking soda
1/4 cup dried cranberries
1/4 cup mini choc chips

Preheat oven to 350 degrees and lightly coat a cookie sheet with cooking spray.
In a large bowl combine banana, PB, honey and vanilla. Set aside.
In a small bowl combine flour, oats, chia seeds, vanilla protein, cinnamon and baking soda.
Stir the oats mixture into the banana mixture 1/4 cup at a time until fully combined.
Stir in cranberries and mini choc chips.

Place scoopfuls onto sprayed cookie sheet, these will not rise or change shape so using damp hands or utensils form them into the shape you would like.

Cook for 14 min or until brown. Transfer to cooling rack.
Store in airtight container or ziplock bag for up to 3 days or freeze. Thaw before eating

Buffalo Chicken Chili

I have been making this recipe for a few years, I have tweaked it so much and finally have it perfect! Its great for fall & winter, football Sundays or anytime for that matter. Hearty and delicious you can make it as spicy as you would like by adjusting the amount of Red Hot you put in it. Recipe is......




Tbsp butter
2lbs ground chic
1 onion diced
3 celery stalks diced
2 carrots diced
5 cloves garlic diced
Red Bell Pepper diced
2 cups chic stock
1 15oz can Tom Sauce
1 15 oz can crushed Tom
1/4 cup franks red hot
1 can Garbanzo beans

Add butter to stock pot and brown the chic breaking it into small pieces with a wooden spoon. 6-7 min
Add all diced veggies. Cook/stir 2-3 min.
Add chic stock, sauce, crushed tom and hot sauce and beans.
Let simmer 20 min.

An awesome app idea is using the Tostitos scoops, fill each one with chili and add some blue cheese crumbles!

I recently started running, its something I never thought I would do. I have never been the "athletic" type. I am blown away by how much I love it. Now that I am fueled by the best products in the world I have the energy and stamina for running. I don't listen to music or anything, I like to listen to the sounds around me. I also like to think and clear my mind. There is a hill on the route that I take and I always have to stop about 1/2 way up and walk, the other day on the advice of a friend I went as fast as I could and hauled ass up the hill. I made it all that way and couldn't of been more proud of myself. It also made me realize just how far I have come. 10 years ago when I first started dating my now wonderful husband he took me on an amazing vacation to St. Lucia. Our resort was built into the side of a mountain, it was gorgeous. Being where it was there was no beach, we had to walk down to the resort below ours and use the beach there. On the walk back up I almost didn't make it, I had to stop many times and was so out of breath and honestly it was very embarrassing. Here i am on vacation with a new boyfriend and I am a mess. 26 years old, overweight, unhealthy, un-active, and obviously didn't take care of myself at all. It took 10 years but I have finally decided its time to take care of me, I take care of my family day in and day out but I never took care of ME. Thank You Herbalife for finding me. Thank You.
